'Slow Food UK CEO, Catherine Gazzoli, and I started our Profiling Producers Project in the highest corner of the United Kingdom, in Inverness, and worked our way down to Edinburgh and Glasgow. The farmers, cheese and whisky makers were all extremely hospitable and imparted a love of the land and food that was inestimable. I was introduced to my first herd of Highland cattle by Jim Frazier of Knochanrioch Farms, the cheese-making process by Pam Rodway of Wester Laurenceton Farms, and had my first sip of single malt scotch whisky at the Glen Goyne Distillery. Maggie Sutherland of Clachandreggy farm showed me what a true head of lettuce and tomato should taste like, and I am forever grateful to Paul Eddy for his fascinating talk on the varieties and history of apples on his orchard. Now onto England. My first adventure was at Peter Greig's Pipers Farm in Devon, where the cattle grazed freely. Suzanne Wynn, leader of the Somerset Convivium, not only conveyed her vast knowledge of bread-making and food to me, but also shared her stroke of genius in the kitchen, alongside her husband Ian Pratt's. In Lincolnshire, at the Woodlands Farm, I met owner Andrew Dennis, his black and silver turkeys and vegetable box scheme. I had a lionshare of whiffs and tastes of Julian Carter's sublime bread at Hambleton Bakery in Rutland, as well as an introduction to milling and baking at the Austin's Mount Pleasant Wind Mill and Tea Room. Lastly, I met the Tennison family, a family of young bakers, in Sussex. I tasted Perry at Tom Oliver's impressive farm and orchard in Herefordshire, and samplped the stunning foods at Carole Bamford's elegant Daylesford Organics. We also visited Peter Kindersley's colossal mecca of animals, organic Sheepdrove Farm, and eco conference centre in Berkshire, as well as the rolling hills, sheep, and bread-making skills learned at Doves Farm, care of Clare Marriage in Berkshire.
